The deep green leaves of this cabbage plant are highly nutritious, full of folate, manganese, and vitamins K, A, C, and B6. Its germination temperatures vary widely, and it can survive in even freezing conditions.

Spinach

Many know spinach is healthy. What many don’t know is that it’s a hardy plant that thrives in cool climates, meaning it can be planted in early spring and later again in late summer to early fall. It’s one of the fastest growing plants you can have in a vegetable garden, with harvest occurring as soon as 30 days after sowing seeds!
